Three kinds of sugar, three kinds of chocolate, two kinds of butter, and a whole lot of R&D went into these baddies. It's amazing how something so simple and ubiquitous can be so technical! From the perfect noisette on the butter to the proper texture of the chopped chocolate, the airiness of the scoop and the craggy final texture, the browning on the base while retaining that chewy bite.......
A seasonal iteration of a delicate, chewy, crisp classic. Almond-based, brown butter-enriched cookies scented with orange blossom and topped with a juicy slice of white wine and vanilla bean poached quince.
the story
mormor started in 2016 as a joyful side-project catering events for friends and friends-of-friends. mormor draws from a grandmother’s love of large parties, a family tradition of hospitality, and work experience in Portland’s top restaurants.
Today, mormor serves the local Portland area through private events, custom orders, and pop-ups graciously hosted by community members. Keeping things “micro” allows devotion of utmost care to every bake, every element of every dish while remaining uncompromising on organizing principles.
the ingredients
mormor uses locally sourced ingredients from farms, mills, and manufacturers wherever possible, adapting family recipes and traditional Scandinavian dishes to regional produce, seasonality, and modern sensibilities.
